The wonderful feijoa is a tropical fruit belonging to the same family as eucalyptus. Its flavor suggests a hint of menthol along with ripe, aromatic grapes. Feijoa may be cooked into a jam, but its intense flavor is best preserved by mixing it raw with sugar into a vitamin-rich concoction. This relish is like a coarse, fresh jam.

Ingredients

  • 2 pounds ripe feijoas
  • 2 pounds sugar

Method

Pare the feijoas and put through a meat grinder with the sugar. Pack into sterile jars and seal.
