In a deep saucepan cook the honey over medium heat for 20 to 25 minutes, until it reaches the soft crack stage (264°F. on a candy thermometer). Allow it to cool until just barely lukewarm, then beat with a wooden spoon until light and creamy, about 5 minutes. Scrape the thickened honey out onto a buttered marble slab or cookie sheet and then, with lightly greased hands, stretch the taffy into a rope. Double one end of the rope back onto the other.
