“Garnished or stuffed eggs” is an appetizer widely enjoyed in Ukraine. The fillings are varied and can be made from finely chopped mushrooms, grated cheese, chopped smoked ham, anchovies, or leftover chicken. As a general rule, use one tablespoon of softened, unsalted butter or mayonnaise for every two hard-cooked egg yolks and flavor with freshly grated horseradish, mustard, lemon juice, chopped parsley, or chives depending on the filling.
