Roll mops, or stuffed herring rolls, can be made with matjes herring fillets from any good delicatessen. Serve roll mops on a large platter of ornate curly greens with sprigs of fresh dill and fresh tomato wedges—do not forget plenty of crackers or rye bread on the side to complete your presentation.

Ingredients

  • 1 cup red wine vinegar
  • 6 black peppercorns
  • 1 bay leaf

Method

Bring the vinegar, black peppercorns, bay leaf, allspice berries, mustard seeds, sugar, white onion, and ½ cup of water to a boil in a medium, non-reactive saucepan. Remove the pan from the heat and let cool.
