Savory eggplant caviar, or “ikra” as it is called in Ukrainian, is very popular in the southern region of the country where eggplant grows in abundance.


  • 1 large (about -pound) eggplant
  • 1 onion, finely chopped


Preheat the oven to 400°F. Pierce the eggplant in several places with a knife and place on a baking sheet. Bake until very soft, turning it midway through, about 45 minutes
