Beet Caviar

Savory beet caviars are served in nearly every household, especially in western Ukraine. Ever the cook, I could not help experimenting with the traditional recipe. In my beet caviar, there is a delicate balance between the tartness of the lemon and the sweetness of the raisins, followed by a little jolt from the horseradish. Served warm or at room temperature, this caviar is particularly good with meats.
