A whole fish with a glistening aspic coating makes an impressive centerpiece on a zakusky table any time of year, but this dish in particular is a favorite choice for those Ukrainians who observe Lent. Fish in aspic is also often part of the very holy Christmas Eve supper known as “Svyata Vechera” in which several meatless courses are offered. There is always a great demand for fish at this time of year, so feel free to substitute whole trout or pike if salmon is not available
