Marinated or pickled mushrooms are eaten anytime in Ukraine, but they are of particular importance during the zakusky hour, especially when served with small pieces of buttered rye bread and shots of vodka! My marinated mushrooms can be eaten after marinating for just a few hours, but their flavor will improve still more if you wait a few days. They will keep in your refrigerator for up to a month.
