This soup can be made with any freshwater fish and is enjoyed throughout Ukraine. Carp is the preferred choice, but feel free to substitute trout, pike, bass, or even young catfish. It is usually served as a clear fish broth or sometimes with the addition of dumplings. The poached pieces of fish are served as a separate course accompanied by one’s favorite sauce. Mashed potatoes are the preferred accoutrement.
