In Ukraine many people pick their own wild mushrooms and they are used in all sorts of amazing and delicious dishes. Using dried mushrooms insures one can enjoy this dish all year long—but if you are able to use freshly picked wild mushrooms, by all means do.

Ingredients

  • 1 ounce dried wild mushrooms, such as porcini, cepes, morels, etc., or 6 ounces fresh wild mushrooms

Method

Put the dried wild mushrooms, if using, in a strainer and rinse under cold water. Put them in a medium saucepan with 1 cup of chicken broth and bring to a boil. Remove the pan from the heat and set aside 45 minutes to soak.
