I firmly believe a salad should be as memorable as the main course of a meal. The dressing in this recipe is an adaptation of a very old recipe in the grand Russo-French tradition popular throughout what is now Ukraine in the early part of the nineteenth century. It is Slavic simplicity at its finest and the perfect choice when elegant fare is in order.
