Cucumbers with Sour Cream

This popular Ukrainian dish is an ideal accompaniment to a summer meal. Some cooks use diluted vinegar flavored with sugar to dress this salad, while others choose sour cream as a binder. This is my variation. Salting the cucumbers draws out their natural moisture, thereby making them firmer. Make sure you pat dry the cucumbers with a paper towel before dressing the salad so it will not be too salty.
