This old-fashioned cucumber salad is very good served with sliced cold chicken, duck, or pan-seared fish.
Put the cucumber slices in a colander set over a bowl and sprinkle with salt. Leave to drain for at least 20 minutes, then pat dry with a paper towel. Put the cucumber slices into a large bowl and set aside.
