This is my favorite way of preparing pickled beets. It is a quick and easy recipe and will keep in your refrigerator for three weeks. It is not terribly sweet as I use just a small amount of honey. Using red beets at the peak of their growing season will yield naturally sweet beets. When I serve my pickled beets, I sprinkle them with coarse salt and freshly ground black pepper and sometimes add a dab of sour cream.
