I believe the tart sour cherry to be the garnet jewel of the Ukrainian kitchen. It is truly worthwhile to take advantage of the brief period they are in season. There is hardly anything better to accompany roast poultry or game, lamb, or even pork than these cherries with their sweet-and-sour flavor. Pickled sour cherries are also used in salads and look splendid as a garnish.
