Pickled fruit often takes the place of a salad on the Ukrainian table, and sometimes is preferable, especially during the winter months when heartier dishes are served. For this recipe make sure to use firm pears—Bartlett pears are suggested. This is also the traditional way of making pickled crab apples, though it is difficult to find crab apples today unless you know someone with an orchard who grows them.
