Ukrainian pastries alone place an enormous demand on numerous fruit preserves, but tea time also requires a nice sampling of preserves to be used in the place of sugar. They are usually eaten with a sip of unsweetened tea or small spoonfuls are heaped into a cup or glass of clear tea. Refreshing summer juices may even have a spoonful of preserves added to each glass. Strawberry, raspberry, gooseberry, sour cherry, black currant, peach, and apricot preserves are the most popular.
