Potato Pancakes

Deruny, pancakes made from coarsely grated potatoes, make an attractive and satisfying dish. Also called pliatsky, terchenyky, or kartoplyanyky, these hot richly-browned potato pancakes are a national obsession in Ukraine and no one ever seems to tire of eating them! Deruny are traditionally served with various toppings such as sour cream, cottage cheese, pork cracklings, and sautéed onions.
