A dish such as this is traditionally served over roasted meats, especially pork, or vegetables, grain dishes, or stuffed cabbage leaves called holubtsi.

Soak the dried mushrooms in cold water overnight. Drain, rinse, and put in a medium saucepan with enough water to cover. Bring to a boil, reduce the heat to medium and simmer for 20 minutes. Drain the mushrooms (reserving the liquid for soups and sauces), chop, and set aside.
