In Ukraine, fresh asparagus is usually simply prepared by poaching in a small amount of salted water and served with a sprinkling of toasted buttered bread crumbs or a dollop of sour cream flavored with a little crushed garlic. Another way to serve asparagus, as well as nearly any other poached vegetable, is with a drizzle of fresh lemon juice and some oil whisked into a vinaigrette dressing.
