In the region of the Carpathian Mountains, Bukovyna and western Ukraine in general, beet leaf holubtsi are filled with raised bread dough and served with a different kind of sour cream sauce. Depending on how much you want to make, you will need more than one Dutch oven, covered casserole, or roaster pan, allowing enough room for the yeast dough to raise and bake.
