This everyday filling lends itself well to innumerable variations. I like to cook rice filling in milk rather than water which gives the end result so much more flavor—and momentarily stepping away from my culinary region, I have even used soy milk which produces a deliciously moist filling. A rich soup stock or tomato juice can also be used in place of water.
