Of all the grains, buckwheat, with its nutty flavor and excellent nutritional value warrants great respect and acceptance in the Ukrainian diet.
Put the buckwheat in a large saucepan and mix in the egg with a fork. Dry the mixture over medium heat until lightly browned. Add the butter, salt, black pepper, and stock and bring to a boil. Cover, reduce the heat to low and cook about 20 minutes, or until all the liquid is absorbed and the buckwheat groats are tender. Taste and adjust the seasonings if necessary.
