This cornmeal dressing is moist and delicious, flavored by rich chicken broth. There is no added fat in this recipe, so your chicken broth must be well-seasoned.
Bring the chicken broth to a boil in a medium saucepan. Pour in about 3 or 4 tablespoons cornmeal in a steady stream and whisk until the broth barely returns to a boil. Gradually add the rest of the cornmeal, stirring constantly. Reduce the heat to low and keep stirring until most of the broth is absorbed. This mixture should not be very thick.
