In Ukraine, this basic recipe for roast ham rests most comfortably on the Easter table. Serve with traditional accompaniments like mustards, horseradish, crunchy pickles, marinated mushrooms, and plenty of rye bread.
In a small bowl, combine the garlic, salt, black pepper, and pork broth to form a paste. Make small slits all over the roast and insert some of the paste as deep as possible into the meat. Rub the remaining paste all over the roast. Cover and refrigerate for at least 6 hours or overnight.
