Basturma is a traditional Armenian recipe for cubed beef marinated with onions and basil in red wine vinegar and then threaded on a skewer and grilled. Ukrainians adopted this dish and, like so many dishes, made it uniquely their own by using pork instead of beef. Pork cubes or pork sirloin tips work beautifully in this recipe, but I have opted for a fresh pork steak instead, which is the style one most often finds in the restaurants and cafes of Ukraine.
