If tackling a suckling pig recipe seems too daunting, try this simple recipe. Always purchase pastured, free-roaming pork from a local farmer or reputable butcher. Select a boned pork loin with rind which will give you a suitable crackling alternative to roasting an entire suckling pig. Do not baste the last hour and a half of roasting so the crackling (skin) becomes crisp.

This recipe for pork roast is a favorite of mine, and I find it offers a particularly nice change of pace from
