Shashlyky (barbecued skewered meat) is a staple throughout Ukraine and possesses ancient roots. Originally, chunks of meat were barbecued over open flames on the tip of a sword by the nomads of the Caucasus. Today, shashlyky are grilled on long metal skewers over a charcoal fire or broiled indoors. Either way it is a featured dish at family picnics as well as a symbol of Ukrainian cuisine.
