My “pies” are beautifully moist on the inside and crispy on the outside, quick and easy to make, and unfailingly delicious. Normally a combination of chicken breast and leg meat would be ground together, however, I find ground chicken thigh meat works just as well and is readily available. Use whatever cooked vegetables are leftover in your refrigerator in the stuffing—cooked carrots, mushrooms, chopped green beans, corn, or any combination of vegetables.
