Pickerel is a very fine tasting freshwater fish. Roasting the fish whole with its head makes for a pretty dish (place a thin slice of radish over the eye before serving). I use fresh dill to flavor this dish, though scallions or chives would also be good. This fish could also be stuffed if you like. Serve with roasted red potatoes and some fresh peas or asparagus for a light and refreshing meal.
