Gefilte fish is a Jewish dish, but regional. In Ukraine, finely chopped carrots and parsnips are often added to the ground fish mixture that is used to make gefilte fish. I like to leave the onions whole and unpeeled because I like a darker broth in which to poach the fish patties. Sugar is another point of contention. Some people add sugar while others do not (I do not). Most gefilte fish recipes are very personal and most Ukrainian cooks have strong opinions conforming to their own family
