Freshwater crawfish (or crayfish) are probably the most popular crustacean in Ukraine. Crawfish has always been popular and dishes using them were especially elaborate during the nineteenth century, most often in combination with game meats and caviar. Today, however, crawfish are usually boiled whole in beef stock and served with lots of beer to drink!
