Freshwater tench is the smallest member of the carp family. It has a sweet, firm flesh and few bones. In this recipe the tench fillets are sliced into strips and skillet-fried until crisp and golden. It is an excellent dish served as a snack with beer. Carp fillets can also be used in this recipe, as well as catfish fillets or whole fresh smelts. Sometimes fried fish is simply served with a splash of vinegar, which is certainly a traditional option, but I wanted to include yet another sauce
