Wild duck (preferably a mallard) should be served slightly underdone or the meat will be tough. There is little meat on the leg, so one duck will only serve two people. If you like, freeze the legs of wild ducks until you have enough to make soup or stew and use the carcasses to make duck broth for use in other game dishes.
