Dark, dense breads such as this one are pretty standard across Ukraine. The deep color is due to rich, syrupy blackstrap molasses and brewed coffee. Black bread needs steam to bake well so you use a “moist” oven. You do so by filling a jelly roll pan with boiling water and placing it on the bottom rack of your oven; you then use the middle rack to bake the bread. This same recipe can be used to make rolls (see variation).
