These rolls are made using a mixture of rye and whole-wheat pastry flours, since rye flour alone does not contain the gluten necessary for the bread to rise. The recipe yields excellent plain rye rolls that make a great addition to any meal. However, I like to add a slice of Swiss cheese to each roll before baking which elevates them to quintessential cocktail fare.
