In Ukraine, these halushky are made with bryndzia, a semisoft cheese made from ewe’s milk containing 40 percent milk fat. It is favored by the Hutsul people of western Ukraine. Unfortunately this type of cheese can be hard to find in the United States. Risking departure from my culinary region, I have found Welsh Caerphilly cheese comes closest to the taste of real bryndzia and can be used with great success in recipes that call for it. Even though Caerphilly cheese is
