Mlyntsi is the Ukrainian word for griddlecakes or pancakes. Whether thick or thin, yeast-raised or not, griddlecakes are one of the most ancient of Slavic foods, dating back to the pre-Christian era. Mlyntsi are always served warm, usually as an appetizer, but sometimes they are served as an entrée garnished with a variety of toppings such as dabs of caviar, bits of herring or sprats mixed with sour cream, or a mélange of lightly cooked vegetables—additions that take this dish
