These buckwheat griddlecakes have yeast in the batter, giving the end result a nice, almost brioche-like texture. Hrechanyky are always served the week before Lent in Ukraine with plenty of butter, thick sour cream, or honey. If you are pressed for time, the yeast batter can be mixed the day ahead and left to rise overnight in the refrigerator.
