This popular Ukrainian standby combines homemade egg noodles and fresh scrambled eggs. Always serve this dish hot, perhaps with a cooked vegetable or vegetable salad. Garnishes, while not necessary, could include toasted caraway seeds, chopped fresh herbs, crushed nuts, or another Ukrainian standby—a dollop of thick sour cream.
Melt the butter in a large skillet over medium heat. Add the egg noodles and toss until well coated with the melted butter. Pour in the beaten eggs, salt, and black pepper. Cook and stir as for scrambled eggs, about 1 minute, or until the eggs are lightly set. Sprinkle with paprika and serve immediately.
