Although Middle Eastern in origin, quinces have been enjoyed in Ukraine for centuries. A small, hard, pear-shaped fruit that is golden when ripe they possess a penetrating perfume. In Ukrainian cooking, quinces are never eaten raw, but are most often added to the pan juices when roasting pork and game.
