Citrus fruits thrive in the extreme southern climes of Ukraine, along with lush melons of all kinds. This is an especially good summer drink. Sometimes fresh peaches are used in place of watermelon.
Peel 5 of the lemons with a small knife. Put the skins along with 4 cups of water into a large saucepan. Bring to a boil. Meanwhile, squeeze the peeled lemons to collect their juices. When the lemon mixture comes to a boil, remove the pan from the heat and stir in the lemon juice and honey. Let sit for 10 minutes. Strain and pour into a large punch bowl.
