This is my idea of heaven on a plate. It’s full of fresh flavours, and is both comforting and nurturing. The colour contrasts of the nutty black rice with the steamed crunchy greens is a gorgeous combination, and I guarantee the dressing will make your taste buds smile. I’ve added some toasted sesame seeds, chopped spring onion and coriander here, but sometimes I’ll add a slice or two of firm tofu as well if I’d like to boost the protein per serving.
