This dish is fresh and light, with lots of lovely flavours yet only a few ingredients. From the charred courgettes, to the gentle nuttiness of almonds, to the zing of lemon, it is summer on a plate. It’s a lovely quick lunch on its own, but I sometimes add goat’s cheese or some smoked mackerel, leftover chicken or salmon, if I want to make it more filling. It also makes a happy side dish to other roasted meats or fish.
