A balanced and flavourful meal in five-ish minutes. Kimchi is a traditional, spicy, fermented Korean side dish and can be bought in most large supermarkets. Make sure you get fresh, refrigerated Kimchi rather than pasteurised, as the probiotic bacteria has potential benefits for gut health. I prefer toasted pumpkin seeds: you can buy them toasted or toast them quickly in a dry frying pan until they start to crackle. You can also replace the cabbage with lettuce if you’d prefer.
