This dish requires minimal effort but delivers an abundance of flavour. I find the mushrooms get crispier if torn or broken rather than sliced, and it’s easier, too. Freekeh is an ancient wholegrain made from green durum wheat, which is roasted and polished to remove the shells. It is similar in texture to bulgur wheat, but with a richer, nuttier flavour. You could swap it out for quinoa, bulgur wheat or wild / brown rice instead.
