This is based on socca, a popular dish in the south of France. I like to serve these pancakes with smoked salmon, capers and cream cheese, or hummus and salad rolled into a savoury pancake wrap, or alongside some slices of ripe tomato, freshly ground pepper and a little good olive oil. Chickpea flour is higher in protein than other grain-based flours, as well as being a source of essential nutrients, including folate and magnesium – and it’s gluten-free.
