The lemony freshness of this light, summery pasta dish reminds me of long, lingering Mediterranean lunches with my family in Mallorca. It’s simple to make and there are endless possibilities to add in more vegetables, or change the type of cheese and scatter with freshly torn herbs of choice. It’s lovely as it is but if you want to make it more colourful, add some fresh or roasted cherry tomatoes, some rocket and a dollop of Cavolo Nero and Walnut Pesto.</
