Fresh, fast and filling, this meal is a big bowlful of flavour. Once you’ve cooked the salmon and soba noodles, it’s a very quick assembly job before serving up and tucking in. The peanuts can be swapped for cashews (or seeds, if you’re nut free) or left out entirely if you prefer. And the salmon could be swapped for trout or another fish of your choice, depending on what’s available and what you enjoy eating.
