Comforting and light but deep in flavour, this is an easy, nourishing dish for any night of the week. It’s a nutritionally balanced meal, too, delivering on fibre from the vegetables and protein thanks to the beans and chicken. I sometimes serve this with a crisp salad or steamed greens, but more often than not we just eat it as it comes. If you’d like to freeze it, strip the chicken meat from the bones first and it’ll be fine for up to 3 months.
